What exactly you are trying to do. I'm too using Tableau online and I too don't have option to edit(Greyed).
Can you please explain bit more what exactly you want to do.
When I am working in tableau desktop, I have the option to edit and view my source data so I assume I have that option when using tableau online.
Do you know which user type or tableau type has that option since it is a option for some "people"? The option is there for a reason I assume? I thought I have the same functionality as tableau desktop that's all.

You'll have to make the changes locally then either update the data source or republish your workbook. I guess you could say that Tableau does not create a "live" link to write or change data on your local machine.
