Try the following steps:
Change the date using Date Values and not Date Parts:
Then Format and choose the correct date format
If you ever need to use a calculated field to get the date name you could always use:
Datename('day', [DATE FIELD HERE])

You still have the other dates on rows, try removing everything but the Date Value "Day" (like showed above in my picture)
Try changing it to Discrete as well
Also try changing the size using the size box (next to color)

I would, but that part of the question was sort of an addendum. The actual question is about formatting the heading of a column.
ah! For that I believe you are looking for:
-Right click the Axis
-Change the text in the "Title" Section
