Hi Jonathan, you mentioned above that Tableau logs every query in Desktop or Server.
I found a KB article (Viewing Underlying SQL Queries | Tableau Software ) that explains if the connection is live, you can check the log.txt & tabprotosrv.txt files and if it's an extract you can check the tdeserver.txt file for auditing user queries.
Do you have any experience with actually storing and visualizing these log files to be PHI (Protected Health Information) compliant?

I’m not sure what you mean by "PHI compliant", there’s compliance with specific laws such as HIPAA or FISMA. Also as this thread has demonstrated there’s room for individual organizations to have different interpretations of what constitutes compliance. In the case of my previous organization (I’m now a consultant with DataBlick) we'd reviewed Tableau Server’s behavior and determined that leaving the logs in-place was acceptable given our usage of Tableau Server.
