The category field you are seeing is just a simple grouping. If you right click on the Category you will be presented with a list of items, like this:
From here you can create the groups you need within Tableau. No need to edit SQL or create tables.

The category field within my data does not have fields such Gross Profit, Net Profit etc. I've managed to manipulate using subtotals and grand totals and renaming to bring these fields into the viz, however, I've had to combine multiple sheets on 1 dashboard to create the full view, which is not ideal as our users need to drill down on some of the data, and this skews the visibility due to the multiple sheets.
Another issue I'm having is that my expenses appear as a negative figure, and the finance team require this to be illustrated as a positive. Any idea how I can change this?

The second issue is tackled by simply making a calculation and multiplying by -1 and using that in the viz.
As for the first, I'm not sure i'm following. Can you mask the data and share a workbook? It may help understand the issue.
