Yes publishing to the server first time your approach works and that is what I have been doing. Once you publish how to you modify and republish. I don't see the Publish to Server option to the modified Extract.
Example:
Step 1: Extract abc is published to the server.
Step 2: Connect to abc from tableau desktop.
Step 3: Modify the name and try publishing to the Server.
No option to publish to the server.

Venkata Krishna Oct 2, 2014 8:20 AM (in response to Anand Sreeram)Download the extract from the server. Double-Click on it and it will open in tableau desktop. Then you can modify the name of the extract as you want and publish it to server as Toby has shown in above screen shots.

Am I missing any step.

Unfortunately, you can't change the name from the Server. In fact, there are a number of IDEAS related to your question that other users have posted. Check out this forum thread for some context.
How do I edit a published data source?
however, you can do this but it will require you downloading the entire data extract.
In your web browser, login to your Tableau Server
Navigate to your data sources
Check the box next to the data source you want to rename
Click "download" in the header of the data source list
Once you've downloaded the data source you can rename and republish to the server.
A headache - yes. But unless someone else knows some trickery I think that is your path.

Open Tableau Desktop and use the file explore to OPEN and open the data source you downloaded. Do all the renaming in the Tableau desktop client.
