Man I got really excited when I saw this potential workaround but my excitement was crushed on the rocks of reality! This appears to only work on Mac versions of Tableau as the Windows version of Tableau 8.2 does not have this option available under the Data menu.
Oh well, need to look at doing this union of multiple sheets the very painful way within my Excel file - manually concatenating the data together on a merged Excel sheet for right now or downgrade to 8.1 and then try to upgrade that workbook to 8.2.
Are you sure you don't mean: "works in windows but not on Mac?"

You need to open the file with the legacy connector for windows. You'll be able to use custom SQL after this

Yeah I used the "open with legacy connection" open in the file open dialog box. See circled items.
When I go to the workbook and go to the Data menu, the only selections I get are:
- Connect to Data
- Edit Relationships
- Replace Data Source
- Upgrade Data Source
The "New Custom SQL" icon that I have circled, as you may already know, only provides the option to create parameters.
