I've also encountered this issue. Every time we publish an updated workbook, the workbook disappears from the list in the iPad app (but not the web version). Uninstalling and re-installing the iPad app, shows the workbook again. We are also running Server 8.0.x and iPad app 8.1.x.

Yes, we've been getting the same thing. We are moving everyone back to browsers until it's completely resolved.
One odd thing: the release notes for 8.1.3 (current version at the time of writing), show updates for Tableau Mobile.
But the iTunes home for Tableau Mobile says that the last update was November 27, 2013. And when you uninstall and reinstall the app on an iPad, you still get 8.1 (264), with a 2013 date.
Hey, Tableau Mobile team, do you need to update this customer-facing metada? Or is there another way we should be downloading the app?
