In Tableau 8.1, this issue can be resolved very easily, by setting the aggregation on the Grand Total row:
If you only have 8.0, there are ways to get this. But its so much easier in 8.1, I'd highly recommend upgrading. If that's not an option, let us know and we'll help you get there in 8.0. The techniques used are all pretty much explained in detail on Jonathan Drummey's blog posts (3 part series on Grand Totals in Tableau):

Here's an 8.0 workbook with the simplest, but least flexible approach--using multiple sheets in container objects on a dashboard. The Grand Total for Time Avg is on its own sheet. This technique is described in detail on Jonathan's blog so I'm not going to go into it much. One of the other techniques, while taking more time to set up, would be more flexible in a lot of ways.
Anyway, take a look at the attached 8.0 workbook for one method. As you can see below, there are actually three sheets on a dashboard. I removed all borders so I could make the data appear to line up more easily. Again, this approach has limitations, for sure.

I had the same issue and upgraded to 8.1. It is indeed much better for Grand total customization...
But still, there is an issue I don't manage to solve while using Groups.
The Sum of Average works for unfolded groups, but goes back to be an Average of Average and not a Sum of Average once grouped. Here below is an example of what I get with the CASE 1 being the unfolded one, and the CASE 2 the folded one.
