Yes, you can create any type of shapes(depending on your data). Attach a sample file(.twbx) with snapshot of your requirement.

I think that's my problem.
Personally I'm a great advocate of using Alteryx for any spatial conversion, Craig Bloodworth has written a fantastic blog post on how to use it for Tableau mapping:
On top of what Chris has said, here's a link to Richard Leeke's tool.
This will get you ESRI SHP polygon into Tableau, but not ESRI SHP polylines. To do polylines, you'll need ET Wizard "Polyline to Point" tool, if you have ESRI, ET Wizards is an extension (the "free" one does polygon to point and polyline to point).
You can then store the SHP in a file geodatabase (and load it via QGIS file geodatabase) or, you can use the ESRI personal geodatabase connector but this comes with a limit of 2GB.
