With the current Tableau Server views the answers are "No"
There are Ideas out there where we have requested greater visibility into the Tableau Server database because the current views are very inadequate for enterprise use. Find them and vote them up.
Sure you can. http://onlinehelp.tableausoftware.com/current/server/en-us/help.htm#adminview_postgres_connect.htm will show you how to set up a connection the Tableau Database and you can build a tableau report to pull off the data you want.
Mary is right, this is absolutely possible by creating your own Server Views. You can download Mark Jackson's workbook here, and edit it to connect to your postgres: http://community.tableau.com/message/230991#230991
I'd actually recommend Andy Cotgreave's Tableau Workbook Auditor for this:
The tool will tell you not only what data sources are used, by workbook, but also what fields are being used, etc. It is an excellent tool, and probably underused.

Agreed, there's generally a few ways to solve an issue. However, he asked two questions and the first one needs further explaination before I would give it a solid "Yes" answer.
You are absolutely right, and if I am being honest, I didn't read the details, only the title.
I should have read the OP. I will note that the TWB auditor does NOT tell you what the Custom SQL queries are--I'm not sure if there is a way to extend it to provide this or not, but it will just list Custom SQL sources as "Custom SQL", if I remember correctly. I like to promote the tool because I'm not sure its widely known about, and it really helped our organization do some recent auditing of our SQL server.
I should also note that it won't audit Tableau Server--I keep copies of all uploaded workbooks, so using it to audit my server workbooks was not difficult for me--but it does require a copy of all workbooks in a directory of some kind.
Matt, you're right about Mark Jackson's workbook, it's great and I've used it, too. I think Mark needs to put it somewhere that can be readily accessed. I'm thinking the Workbook Library or the Dev Community are logical places. Andy's tool is really great as well and it's in the Viz Talk section...which makes me wonder if maybe we need a separate community for Server "stuff". Not sure I'd put tools/vizes in the TabWiki, I see that more for documentation, but...?
I hadn't noticed the workbook library before. I'll try to upload some workbooks there.
