When you are viewing the chart you want to edit, go to 'Worksheet> Tooltip...' on the menu bar and this will allow you to edit the order and number of fields in the Tooltip.
To add a field, simply click the insert drop-down menu and select one of these.

Two things to note:
- A relatively recent (and very cool) feature is "Viz in Tooltip". Select Sheets and then the specific sheet from the list
- If you want to add a field, but don't see it, it's because the field is not visible on the view. Drag it to the Details or Tooltip icon to see it in your list.
