Those links are beneficial, but we already have Tableau desktop and we are considering Server, hence looking for the performance differential between public premium and server.

This would be an interesting read for me, too. Most often a decision around Public Premium vs. "in-house" Server is made on the basis of feature / functionality differences -- for example, Server can access "live" data sources, while Public can't. I guess these differences aren't a decision point for you?

Without sounding flippant, not really. The priority is the latency of calculations:
I think -
desktop - calculations/filtering speed dependent on the local machine processing power
public premium - calculations/filtering speed dependent on the server load (and possibly bandwidth affects this)
server - calculations/filtering speed dependent on the CPU & cache?
I've seen instances on a couple of our heavy/intensive visualizations where public premium takes long enough to be distracting to the end user (say viewing a viz on iPad)...it 'draws' fast enough but when a filter is applied - say to a dashboard with 9 sheets with a 'what if' style parameter...it grinds away.
That's why I am really interested in seeing a side-by-side test.
